Favorite cut of steak/beef
I do this with all steaks and have for years...I never cook a steak on the grill or in a pan without letting it sit out on the counter for at least 30 minutes. Speaking of fillets I do them from time to time and always in a cast iron. I set them out like I said to get them up to room temp. Then I start the pan over medium high heat with a little oil and get a great sear. At that point I reduce the heat to medium and drop in a big knob of butter and a couple whole garlic cloves. Once the garlic has toasted and released its flavor\oil into the butter I baste the steaks with garlic butter turning them often. I pull them at 125, rest for 5-7 minutes and the carryover heat will take them up around 130-132 which puts them at high rare or low medium rare. Then I spoon some of the garlic butter over the steaks and over top of some skin on mashed potatoes. That with a few big shrimp or prawns and a big glass or two of dry red wine is a d**n fine meal. This is also important to mention and I'm in no way saying do it my way. I've done it for 10+ years and have had no issues with stomach illness from it. That said it is definitely safer to keep meat under refrigeration until cooking and cooking it to a safe done temperature. To me I like my steak to be as good as it can so warming it slightly on the counter and cooking it under done so to speak yields a better product to me. If food borne illness is a concern for you absolutely follow the safety guidelines.

Famous Fisherman Who Inspired You
Doug Stange for me and its not even close. Because of his multi species approach particularly towards catfish and the "other" species like suckers, gar etc. Also he has has an impact on me as far as selective harvest...not keeping the biggest fish and not taking home a bucket full, instead keeping enough of those medium sized more abundant fish for a meal or two. In fact his book Life and Times in catfish country is my favorite fishing book. He has a very particular style of writing that helps tell the story while sneaking in plenty of nuggets of info.

A ribeye medium rare off the grill can't be topped in my opinion. That with a salad and some grilled asparagus with a big glass of whiskey for dessert is about a perfect spring meal.

Favorite fish for tacos...
I to am a carnitas guy...came up with a recipe about 12 years ago that my friends and family all love. But some days I don't want to cook for hours, and I get tired of ground beef or steak so on those days I like fish tacos.

Pain in left flank....
Muscle tear....no kidney stones. Rest, light exercise, muscle relaxers to help me sleep and no work til Monday. already have that...found a way to live with that ....kinda. This pain is different and in a different spot.

So Saturday I was carrying some junk down the stairs for my girlfriend. I've had lower back and occasional neck issues most of my life so I'm used to that pain even though it sucks while dealing with it. Well I got in the garage , set this stuff down and when I got back up had a pretty strong burning sensation in my left flank area. That quickly turned into pretty sharp pain especially when twisting or bending the wrong way. I'm also getting occasional spasms\waves of sharp pain that last a few seconds to a minute that subside. So far I've been taking Alleve and that helps but it doesn't completely do the trick. Going to the doctor to see what they think. Anybody experience this before?

So I watched the Baz Luhrmann biopic last night and found myself very bored. I usually go for musician biopics but not this one. The way he paced it along with the fact that he incorporated rap into a movie about 50s-70s rock just seemed ...well...stupid to me. What did you think?

Water Temperature vs Forage
I agree with this. I've seen it for years in my northern waters even a week or two after ice out. Find a shallow bay on the north shore of a pond up here on a sunny day...even if the water temps are 40s guess what? There are bluegill, crappie and whatever pond minnows are in there eating bugs and microorganisms in that shallow warming water. Right behind them are the bass.

What exactly does smearing Vicks Vaperrub do?
The cooling and effervescent affect always seemed to sooth my cough and somewhat help congested breathing. Some people claim it doesn't do anything. Whether or not it really does or its a placebo affect situation it helps me.

Accurate! makes sense. Ill be 40 this year so I've worked full time for 23 years and ive got at least that many to go. That reality has set in and made me even more annoyed with worthless people.

The less tolerant I am getting of BS. Always was taught as you age you become more patient, understanding and compassionate. I guess in some ways that's true...but in other ways not so much. I've got no time for lazy people or their dumb excuses. I'm well on my way to becoming a crotchety old wretched by the time I'm 45.

For me I'd say Mahi....freshwater wise probably perch or bluegill because they are a little more firm. What say you?

I agree that catching them from cold water helps. And soaking them in ice water with some kosher salt goes a long ways. Even then they are more mushy than flaky. Cutting them into fish stick size strips or thinner and frying them super crisp helps.
