Last night’s meal. Was out Saturday and wanted to cook something really nice for a Sunday meal. Went all out on Bibimbap. This is how it turned out. A few new ingredients and I tried to be as meticulous as possible making it.

My Korean food repertoire is thus far Bibimbap, kimbap, pajeon, jjajangmyeon, and bulgogi.

Ha! It’s not really fitting… it was the only soda we had in fridge and it was some pineapple flavored stuff, I can’t think of the name for some reason

I might get some fishing in this weekend man! Gonna be very chilly though and don’t expect to catch much. Looking for a chill weekend after Nashville.

I haven’t been to nashvegas since 2009, it was a poop show back then. From what I understand it’s a few thousand times worse now

Well heck it was alright enough for me. All the live music, great food and drink, pretty clean compared to other cities I’ve been in.

If it was better back in the day I wish I went sooner.

Im normally a bit of a recluse but been trying to change that. The crowd I was with loved being there and I would go back someday. I just had a lot more fun than I expected.

Well that’s good!! All I hear is that it’s far too crowded and expensive, I definitely had a blast seeing the Avett brothers at the ryman auditorium on Halloween

Most crowded place I’ve been probably. We fared okayish price wise but definitely could get expensive in a hurry. Buying drinks at the bar not a smart move. Our hotel was within walking distance of broadway so you can do the math from there. The larger crowd stayed in an Airbnb not within walking distance and paid significantly more than our smaller group did.

Back in 06, I saw Tom Waits at the Ryman. One of the best two concerts I've ever seen (the other was also Tom Waits, but in Knoxville in 08).

My grandmother would make SOS with Thanksgiving leftovers. Turkey, mushroom soup and peas over toast

I have more free time in the winter, so my dishes get a little fancier. Tonight was broccoli Asiago risotto:

I wish I was as good with a camera as some people. My food shots could make chicken parm look like oatmeal.

Made something different again. This one has no name. Just something someone came up with on the inter webs. Skin chicken thighs and veggies combined with gochujang, soy sauce, and other spices. The chicken I marinated for around 5hr, that was my own thing, not the recipes. I also doubled the amount of sauce. Came out a lot different than I expected. Not spicy at all but you get subtle flavors of soy, salt, gochujang, and sesame on top of natural flavors of the veggies. Chicken cooked nicely. Radishes and green parts of green onions cold while rest hot. Sweet potatoes are in there. Everythibn that was cooked cooked together in a sheet pan.

Mandu (Korean Dumplings) served with and unfortauntely they are a little black on some sides. Not bad though.

Really liked the dish and will make again.
