Yep. They come from a little lake I keep to myself. Gin clear water and not overly fished. I've caught gills pushing 11" out of there. Not bad for Northern IL.

Reviving this puppy after it surprisingly took summer off :smiley:

Smoked jalapenos diced into smoked cream cheese stuffed bacon wrapped bratwurst dogs that we topped with grilled onions. They will be back on the menu!

Glad it’s back.  Had a hearty meal of meatloaf from the bull my daughter had processed tonight.  A little more of a winter deal for us but I was in the mood for a hearty meal.  Last weekend, finally got around to frying up the walleye I brought back from Lake St Clair.  Paired with some hand cut fries all in peanut oil and we had a good old fashioned fish fry. Cole slaw and homemade tartar sauce balanced it out.

I'm a better cook than I am a bass-fisherman.  by a mile.

 

I knew the food industry was a lot of work, a lot of school debt, and not a lot of pay (for most)..so I never pursued it.  

 

so, I try to kikcass at home.    I find great joy in tasting some food in some restaurant, some foreign country, and trying to recreate it at home.  I've had some crazy failures.  funny ones, but sometimes....sometimes I kill it.

When you have a daughter who likes to forage for natural foods, you get to try some different things.  She's been educating herself on mushrooms and I have a natural like for them so she brought over some oyster mushrooms she foraged off the woods on her farm.  She's already tried them so I'm relatively certain my liver is going to stay functional for the near future.  Process was to sweat them in a pan, then cut up and cook.  I added some bacon and egg to make an omelet and it was very good.  Ya'll need to do a welfare check on me in about 3 hours.?IMG_1459.jpeg.e358fa38a7cf446adae50d6076d5a60c.jpeg

Venison jerky. Peppered already on the smoker, pineapple jalapeno and honey habanero marinating

Road kill has better flavor, just have to pick out the crunchy things

 

I have a buddy whose wife won't let him butcher deer in his garage. He gives me half a deer for the use of my garage and my assistance. I have a bunch of stew meat and ground meat, and he gave me some backstrap(which he rarely does), as well. Been a couple years since he got one. This one was a 6 pointer, he estimated between 150-175lbs. He's got 2 more week long trips planned for bow and 1 week for gun. I think the most he ever got in a season was 4. A lot of frickin' work.

 

Coulda got some turkey but he didn't buy the permit this year. Said he always buys a permit and never sees turkey. Had 7 hens cross his path on day 1.

@TnRiver46 @slonezp I never got any venison this year from my buddies who hunt. Normally I make stew every fall/winter. I wish you could buy it in stores.

You can buy wild game from a place called Wild Fork. I have purchased Yak, Venison, Boar, Bison etc. If there isn't a store near you they will gladly ship.  www.wildfork.com

Getting all jazzed up for my 2 favorite dinners of the year.  Christmas Eve clam chowder and Christmas dinner of prime rib and Yorkshire pudding and all the sides.  We just installed all new appliances (stove, fridge, microwave and dishwasher) so it will be our first holiday meal with the new stove.  Really disappointed we could not do a gas stove even though we are on gas to the house, running new lines and exhaust is just too much.  So, it’s a new convection oven and glass cooktop.
