Need help on marine battery for trolling motor.
the group number is the physical size of the battery. the 27 being larger than the 24. The 27 will have a higher AH rating. You are going to want an charger that is at least 10 amps. Fully automatic is the way to go. there is a lot of good info here http://batteryfaq.org/

Extending trolling motor wires
I would go with at least 6AWG stranded wire. You maybe able to find butt splices that big but you need a big crimper to connect them. I use split bolt connectors, Lowes has them, You just need two wrenches to make a good connection and you can undo if need be. Just cover in electrical tape and your good. to connect to the battery I use ring terminals. Again you need a crimper. There are ring terminals with screws I just do not like those. split bolt.

Electronics Question
If you run on one battery. The only problem you may have is the trolling motor causing interference with the depth finder. If you can live with that you'll be OK.

Transducer Mounting Board
Humminbird sells a transducer that uses double sided tape for mounting. http://store.humminbird.com/products/313992/XSO_9_20_T here is the tape. http://solutions.3m.com/wps/portal/3M/en_US/VHB/Tapes/ No heed to drill holes. I would thing this would work with a regular transom transducer.

boat speed
Ah! much clearer now. You will need to find out what RPM your 9.9HP is turning. If it is under 5500RPMs or so you will need to changes to a smaller prop. I would also check to make sure you are firing on all cylinders. I had a 14' tri-bull that would go over 5mph with a 9.9 merc.

boat speed
after rereading your post. A boat will not plane at 5MPH. My 47lb. minnkota will push my 12' v bottom close to 5mph. it will depend on how big you boat and motor as to whether you can get close to 5MPH. At some point you will be putting more power out and not going any faster. The extra weight from extra batteries, motors and drag will work against you.

boat speed
that is called hull speed. That is how fast a boat can go before it gets on plane. what that speed is is determined by is hull length at the water line. Once a boat reaches hull the speed the amount of power required to plane increases exponentially.

Jon Boat , no trailer, need help figuring out how to unload out of truck at boat launch
One of these may help as well. http://www.harborfreight.com/cpi/ctaf/displayitem.taf?Itemnumber=39168

A trailer would make life easier. one of those little boat trailers for Harbor Freight works well for me and they are only $330.00

Battery Charger?
The 1.5 amp charger will not be enough to charge your battery once it is run down. The 1.5 amp charger is designed to keep a fully charged battery charged. You will want to get a 10 to 20 amp fully automatic charger. Meaning one you can leave hooked up all the time. I use a guest 2612A charger.

What amperage is the charger? Is it fully automatic?

Securing Trailer Light Wiring
They are self adhesive cable tie mounts. I get them at lowes. I have used them on a lot of surfaces that were no smooth. My pop-up ceiling for one and my trolling motor mount for two. I have never had a problem with the coming off. I am not sure about the evaporation Wayne P. pointed out . That could be a problem. I do know they say on in the rain they have not come off my trolling motor yet, and wet .

I have always used these. Caulk can get messy.

Handheld GPS And Drawing Power?
I doubt it. You could probably run it for a month on a deep cycle battery. I don't think my cranking battery is a deep cycle ,not sure! Or even a cranking battery.

Adding third battery to an existing 24 volt trolling motor system
You can not add a third battery to a 24V trolling motor setup to extend run time. If you hook it in series you would have 36V and would blow your motor. You could only hook it in Parallel to one battery. This way you would still have 24V but the two batteries, in parallel, would then become one big battery and the single battery would drain faster than the two in parallel there by not extending your run time. You can add two batteries to your system to extend your run time. You can hook each pair in parallel then connect those pairs in series to double your run time.

Hydrofoil, huge improvement.
They do help. I noticed a huge difference in time to get on plane when I had one on the 25 HP on my boat.
