  3. I prefer reverse sear on the lamb by far....but I clean and preseason racks in bulk from Costco and then freeze in sous vide bags. Nights where I need a fast protein I take them right from the freezer and into the sous vide. Come out great, but lamb REALLY is good over natural lump charcoal and the fat breaks down much better as well.
  4. Almost, part of the chuck....so not a steak, but when it's Wagyu it makes a killer steak. Zabuton/Denver is what it is normally called. Since someone beat me to it, I will just say DO IT. I set up my green egg (ok, joe jr) at 225F and smoke the steak to 105-110 depending on the cut, then take it off and get the grill to 800F and sear it rapidly for 20sec/flip-repeat until crusty. Short rest and OMG. Sous vide fixes chicken, reverse sear beef. I've had a sous vide for more than 15 years and use it a lot, but never for steak. Let it rest on a rack and then blot it with paper towels. They sear really well. Definitely require some fat, sear weights or a little pressure, and a hot pan but it works. Only time I sous vide a steak is if I really need one and it is frozen or I want to tenderize a cut like making carne asada.

  6. I like all cuts of steak, depends on my mood. Biggest key is to dry brine them at least 12 hours before cooking. Reverse seared on the grill it is hard to beat a ribeye Mostly raw with a super crunchy outer it's hard to beat a tenderloin Want a taco? Skirt steak is my choice. Feeling like Korean bbq? A wagyu zabuton is killer. With chimichurri? A hanger steak. Having people over for a family style bbq? Picanha. Hungry for french fries? Bavette...although great with a chimichurri or gremolata as well. As a skewer? Flank by far. On a day where I don't have time to reverse sear a ribeye? NY Strip. Making chili? Sirloin. Feeling cheap, but want something tender and yummy? Flat iron. Cold outside and need a braised dish? Beef cheek. The one preparation I am not a fan of is whole roasted prime rib. Makes no sense to me to cook something whole that really needs more surface to be seasoned. Not that I don't enjoy it, but I'd take any of the above over it.

  8. Lots of permanents up on this side of the lake. Most of the lake is barren outside of where the ice is generally thickest. I don't ice fish, but I am an avid snowmobiler and to get to the trails I have to pass them all.
  9. I mostly make sourdough boules with a 4-5hr ferment followed by a slow bulk in the fridge. This was my 2nd time ever making baguettes so I basically used Patrick Ryan's recipe from his master class. It is a one day preferment, mix + 24-36 hours of bulk in the fridge. He didn't reference waiting for it to warm post coming out of the fridge and that made shaping difficult and even after a 2 hour rest in the couche they were not fully fermented and ready but I needed to eat so I baked them anyway. You can see that the crumb isn't very open, but the taste was there and the crust great. The general process of those baguettes makes sense though.
  10. Local store had lobster tails for $5 so we had a lobster tail snack with a ribeye and some home made baguettes. Threw out my rotator cuff so I decided to avoid the grill and did a reverse sear on the meat via the oven and a cast iron pan.
  11. Nov/Dec are when I make 35%+ of my year. Between that, the kids schedule and trying to be a family man I tried to avoid time on the net, in particular since it will be months before I can fish again. Ice fishing is not my thing...
  12. I use my wives Jeep Grand Cherokee to tow the boat. Only negative is that it means I have to trust her to drive my car that day.
  13. I just tried the opposite approach and put the snow tires on my car. Hoping that will make it hit 70 again so I can get out at least one more time.

  15. Weatherman heard I was coming back from Germany and was looking forward to fishing. And we got a lot more than that here. Good 3" in my yard although it did melt off a bit.
  16. I've been gifted a couple and always try to use them....but despise them completely. Too much non-useable stuff on them and the tools you do need are big compromises when you do. Gave them away.
  17. I use a canoe where I won't be changing baits often, want stealth, skinny water, or now mostly for the bwca. Kevlar, Eugene Jensen hull that I am totally willing to bang into whatever is necessary to catch fish. Filling scratches is easy. Bring a primary non stable boat it isn't easy to stand in, but I do it all the time. The wind pushes it around and that sucks, but wind sucks pretty much always for fishing. Wake boats are nasty if they are close and you don't turn into the waves. For certain situations and areas there is nothing better than a canoe....but most of the time I would prefer to be in the Ranger.

  19. My neighbors Irish Setter swallowed his 13 year old sons baseball glove. Found it a few days later with no more stitches. I can't imagine passing that ....
  20. I use 10lb PP braid on my spinning rigs. My guess is you are getting a lot of line twist and it is biting you when you cast. MN is right though. Nice mellow motion can net you way more accuracy and quote often distance as well
  21. Big fan of booyah and snagproof. As for size, my biggest fish on a frog in Northern MN have come on a frogzilla so don't think you need micro frogs to catch fish up North ...
  22. Length isn't the problem. I love long rods for almost everything, but built a 6'9" heavy cover pitching rod. Pinpoint accuracy is easier with it. If the targets are more open I use a 7'2". Smooth motion and a trained thumb are the goal. Definitely use some electrical tape to help minimize bird's nests and reduce your braking until it comes off the reel logically.
  23. I have 5 of the XF SC blanks. Killer rods for all the applications already discussed and in general my favorite medium blank
  24. I think a hybrid would have been better. 5 biggest fish weight is doubled or tripled in the overall bag.
