Congrats on a great day. Now you should get yourself a good computerized fishing log and transger all that information to it. I have one from www.taysys.com and it is awesome. It allows you to enter everything from water temp & conditions to equipment & baits used.

I would look for areas that create eddys during low tide and fish them during the tide movement (up and down). Some of the best are man-made bridges, bulkheads, docks, etc.

Without knowing all of the details, I would venture to say that you are either pulling the fish's head out of the water or allowing the fish to break the water. Try to eliminate the head breaking the water...... Try using a net.
