What's for dinner?

Some ideas…fancy grilled cheese with either some shaved ribeye or prosciutto. Pizza pockets where you just fill some puff pastry with sauce and mozzarella. Pineapple fried rice, falafel gyro, chicken curry, chicken cordon bleu, taco casserole. All fairly easy and I would think most kids would eat. Another option is French toast or pancakes with an omelette and some fruit, breakfast for dinner is always fun to mix it up.

Just wait until they're about double that age.  You will run out of food in 2 days.

Home made pea soup 'boss lady' made.  It's her first shot at it.  She's Filipina, so American food is generally a no go, but we had ham left over from New Years.  It's very good.

Lots of great ideas folks!  Our current standards are spaghetti and meat sauce, american tacos, baked salmon and rice, grilled chicken and cilantro lime rice, pork chops, burgers and frozen kid crap.

One meal Nora and I like...and it's pretty easy

2 pkgs Kraft Mac&Cheese - make per instructions.

Add to that

1lb cooked/crumbled ground beef (or pork)

1/2 cup grated parmesan

1&1/2 cup grated cheddar

1 pkg heated mixed veggies.

Leftovers make good lunches.

We just had a homemade chicken pot pie casserole with rotisserie chicken. Super delicious!!!

Wife also likes to make an enchilada casserole.

Meat loaf with side of Bob Evans mashed potatoes.

Spaghetti (thin spaghetti)with ground Italian sausage, meat sauce and shredded Parmesan cheese.

My niece loved our homemade Mac and cheese(Barilla elbows) American cheese and sliced up hotdogs(Hebrew National 100% all beef). Her mom was mad one day when niece kept requesting it and she couldn’t duplicate it. Her absolute favorite.  😁

All great for leftovers!!!

Things my kids(2 and 4) really love (and us)

-Hibachi style chicken and fried rice (made on blackstone)(big hit)

-Salmon and jasmine rice

-Cheeseburgers

-Baked/grilled/rotisserie/breaded and fried chicken w/ mac n cheese and/or potato croquettes

-Pancakes/Waffles/French toast

-Eggs with sausage and toast

-Meatloaf

-Tacos

-Grilled cheese

-general tso chicken with broccoli and white rice bowls

-Lasagna (believe it or not)

-Pasta with meatballs and red sauce

-sandwiches (turkey, ham, etc.)

-philly cheese steaks (I make the mushrooms/onions/peppers separate to add for those who want it)

-steak

-boneless buffalo wings. We make our own so we can put our own sauces on and the kids basically get home made chicken nuggets. Well make fries with it and either eat the wings as is or make a wrap with lettuce, cheese and ranch. Kids each get a small dish with some sauce to dip if they want to try it.

Cant think of much else. My 4 year old is very picky and takes a lot to get her to try new stuff. She's slowly coming around and will at least try new things. My 2 year old is hit or miss. Some days you cant feed him enough of a dish and the next time hell not want a bite of it. He does eat more variety though than his older sister. Never thought some of my biggest struggles with kids so far would be feeding them.

EDIT: Forgot these two good ones.

-Taco roll: get a pizza dough and stretch it out like a loaf of bread, cook taco meat with diced peppers and onions and spread it out on the dough, spread mozzarella cheese on top of that and roll it up and bake it until the dough is cooked. I make a dipping sauce with ranch and franks red hot mixed.

-Chicken roll: Same dough process above but spread grilled/seasoned chicken with spinach and mozzarella cheese and roll it up. Well usually use creamy russian dressing for this as a dipping sauce.

What has been good to feed the great granddaughters has been, chicken nuggets, pizza, fried chicken and burgers.  They will eat potatoes any way we fix them.

Teriyaki Chicken cooked in a crock pot.

Taco Casserole.  We swap out the black olives for jalapenos.

The leftovers are great the next day.

I do all the cooking in our house. I follow a few different pages on Facebook and get suggestions off there. Tonight is cheesey Ritz chicken and probably some mashed potatoes and green beans or something on the side. My boys love the chicken.

  • 4 large boneless skinless chicken breasts cut in half or use an equal amount of chicken thigh or tenderloins

  • 2 sleeves Ritz crackers One sleeve of Ritz crackers contains about 35 crackers and makes 1½ cups of crumbs. This recipe calls for 2 sleeves (or 3 cups of crumbs)

  • ¼ teaspoon salt – or onion powder, garlic powder, or paprika. Add cayenne pepper or red chili flakes for a bit of a kick.

  • ⅛ teaspoon black pepper

  • 1 teaspoon dried parsley

  • ½ cup sour cream or plain Greek yogurt

  • 3 cups grated cheddar cheese – use mild or sharp cheddar, or change the cheese and try mozzarella, pepper jack, Monterey Jack, Colby, or smoked Gouda.

  • fresh parsley for garnish

Sauce

  • 1 (10.5-ounce) can cream of chicken soup – or cream of mushroom soup or make a Cream Soup Substitute

  • ⅛ cup sour cream or plain Greek yogurt

  • 2 tablespoons butter – We use unsalted butter.

  • 2 tablespoons milk – We use whole milk or 2% milk.

Chicken breast covered in shredded cheese in a white bowl.

Chicken breast covered in ritz crackers and cheddar cheese in a glass bowl.

Coated Ritz cracker chicken in a baking dish.

How to Make Ritz Cracker Chicken

  1. PREP. Preheat oven to 375°F.

    • Place Ritz cracker crumbs in a shallow dish or bowl along with salt, pepper, and parsley. Place sour cream in a separate dish, and cheese in another.

  2. COAT. Dip each breast half into sour cream, coating all sides. Place it in the cheese dish, coating it with shredded cheese. Finally, place each breast into the cracker mixture until well coated.

  3. BAKE. Place into a greased 9×13 baking dish. Cover and bake for 50-55 minutes.

    • Remove foil and bake for an additional 10 minutes or until edges are golden brown.

  4. SAUCE. As the chicken is finishing cooking, place the sauce ingredients into a small pot and cook on medium-high heat. Stir until well combined and serve on top of the chicken along with fresh parsley. ENJOY!

Seems the only things the 4 yo grandson eats when he comes over is spaghetti or Mac & cheese. From what I can remember from some of the others is hotdogs and pizza.

When they are grandkids you can get away with giving them whatever they want.
