Ram mount location suggestion
I would mount it on the right side of the console with a Ram mount that would allow you do so, like the one maybe in the picture that 1simpleman was showing. Let us know how it works. This is the unit I am thinking on buying.

Jerkbait rod casting or spinning?
I prefer casting better just because it just feels more natural. I use a Falcon Lowrider Med with 12# test, usually throwing a Smithwick Rogue.

Ned Rig!!! (Update)
No doubt the Ned Rig works, it has changed my fishing. It will catch fish if you just sticks to the basic of the Ned Rig and not try to make it better.

Water in the boat
That was an expensive fix but a great choice hope you enjoy it. Since the OP traded the boat, it is not his worry if the boat get fix, it's the dealer choice.

Crankbait Colors
This ^^^^^^ I mostly fish a crawfish, or shad color. If you fish a lot of clear water, Livingston Lures has some great clear water colors.

Need input on Apontus trolling motor.
Never heard of it either. I would say if you can find a Minn Kota or Motorguide at about the same price. I would go with one of them. If this motor is way cheaper then I would probably try it. Make sure it has a good warranty. Wally World is pretty good at taking things back. As far as the prop, either 2 or 3 blades will work OK.

I have used Simms and Columbia, liked both. Once you get to using them, you feel naked without them.

I dispose most of mine on tree tops. Other than that, I don't know of any disposal of hooks.
