A dry brine will give you more flavor, a wet brine will water down the flavor a bit. If you do a dry brine add a little baking powder with it for a crispier skin.

I agree with @Tennessee Boy keep it simple for the large crowd and experiment later on. I’d be the one to try something new for a crowd and screw it up and ruin thanksgiving.

I’m very fortunate that I have a company vehicle that I get to take home, so my personal vehicle gets about 50 miles put on it a week. My company vehicle on the other hand, I go through a tank every other day and average about 40k miles a year. I’d go broke if I had to pay for all that gas.

You could be neighbors with Zona on Klinger lake. Some of the fishing he does on his show is on that lake and there are decent sized smallmouth in there.

Yup the recreational traffic is crazy which is why my time has been limited out there. Spring and now is the time after all the crazies have left for the year. I say this ever year and never follow through but my plan is to give it some attention next spring.
