Fishing Tackle has been wiped out from stores.
I'm only expecting two more things. Fury 703SF from Legacy - they say they'll have them by mid-Feb 3607-10 boxes - finally cancelled the TW order of those from two months ago as their 'due in date' keeps getting pushed further and further out. ordered them from Scheels with PayPal...they have them in stock.

Yep, the EP location. When I stopped in to take advantage of their pricing on Mitchell RZT reels in November, it was loaded up again. Popped in earlier this week to check on something and it was still full. July might have been a blip.

I popped in to the local Scheels and it was stuffed. No supply problems there at least.

Word Filter addition
The problem main is that what is **** for one person isn't for another. Trying a objective qualification for something that is subjective for each individual runs the risk of going down the rabbit hole and not coming up again.

Universal Baitcaster Setup
While it's not ideal for all the techniques, that will work for pretty much everything you listed. You can also add spinnerbaits, chatterbaits to that list. One thing I would be careful of is setting the hook on the treble lures (jerks/cranks) with braid as your main line. Too hard a 'yank' and you risk either straightening out the lighter hooks or ripping the lure through the bass' jaw.

Winter 2020-2021
30s next week according to long-range forecast. Maybe we'll have ice out earlier than average...which means I need to book-butt - after my surgery recovery that is (hernia repair this Friday...been through it before on the other side...it's nothing big).

Heat Shrink Grip Durability
Heat shrink does age and get brittle - might take a few years, but eventually it's going to start 'chipping'. This is from years of electronics experience.

Medium Heavy Spinning
I'm pants at skipping with baitcasters, but wanted to skip jigs, spinners, etc. So this year I've set up a 3000 size reel on a MH/F for skipping duty.

Any Pelican Bass Raider Owners Out There?
You also mentioned "685 Marine Cranking Amp" - that tells me it's a dual-purpose battery, not a pure deep-cycle.
-
Any Pelican Bass Raider Owners Out There?
Should have gone with a deep-cycle battery instead of a 'multi-purpose' one...those starting batteries drain quickly under a constant load. Also, lead-acid batteries don't like being drawn down to under 1/2 their AH rating.

Line ta Rod
Only time I worry about the line is "does the diameter work with this reel?" The rod line-rating is pretty much a non-issue.

Your Preference
For the canoe - 7' rods, whether it's spinning or casting. Spinning runs light to medium-heavy (my jig/chatter/spinner skipping rod), casting runs medium an up. Shore-fishing - 6'6" as there's usually overhangs I gotta watch out for. For this medium-light and medium as my shore-expeditions are targeting panfish. Handle material - doesn't really matter, but I find I prefer a split-grip no matter what. Casting reels - low profile, always and I don't 'upgrade' the handles, the stock ones work just fine for me. Spinning reels - I have 1000-3000 size depending on the technique I'll be using them for - and again, stock handles. Must have the AR-switch...which has reduced my choices as more-and-more reels are eliminating them. None of my in-use spinners are over 9oz - my retired Trion-35 did go over 10...retired because as you said, it felt clumsy.

How much is too much?
Currently my dedicated canoe number is 10. I can take two of my shore-rigs with if I want to, but that'd be the exception rather than the rule. It's evenly divided between casting and spinning - and every rig has it's preferred technique, but there is some overlap.

Security Software For An Apple Computer
It is true that Apple products are more robust in fighting off viruses and malware - they're not immune. Extra security is 'belt and suspenders'...can't hurt and could help. Yes, the tech lied - they do that.
