Antelope got a bad rap back in the day when a lot of out of starters would travel to Wyoming, shoot Pronghorn, strap them to the top of their vehicle and drive home. I've heard this too because they live out in the sage brush and eat that crap. Could be total rumor too though, as I've never had it. I have had sage grouse though and that was not edible. Taste preferences are a very individual thing and I've often heard that sage grouse are inedible. It's probably a good thing that sage grouse (the prairie bomber) seem to have a bad rap for the table since their numbers are decreasing due to habitat loss. But on my trips out west I've eaten my fair share and find they are most similar, to me, to beef. I usually grill or stir fry, but the key is not to overcook the rich red meat. I like 'em just fine. Never had goose but a buddy who hunts them says the breast meat (which to the eye resembles sage grouse) is delicious when marinated overnight in Italian dressing. Where we hunted in Nebraska was a 30,000 acre buffalo ranch. Salt and pepper, sear on all sides, then into a 400° oven for about 10 minutes. Take it out once internal temp hits 130°. It tastes pretty similar to Mallard. That said I've got a close friend whose a big hunter who has tried tons of different stuff over the years. He generally like any kind of game meat. Bazoo Posted February 4 Share Posted February 4 Of all the game meat I've ever tried, black bear steak and roast was the best. It was a friend's church that held a game banquet. There was some duck there that was delicious too. I had a friend that gave me a cooked deer roast once, and it was amazing. Very nice flavor. No idea what he did to it. I do know he's a wild man and will cook and eat about anything, so he has lot of experience with game. I've made some decent deer roasts in the crockpot myself... but not like that.
