The texture is vastly different, catfish is kind of mealy where white bass is flaky 3 Quote

What I've found helps its cut it into small strips..more surface area for breading=more crunchy texture. I know other guys on here bash you for eating white bass but I honestly think they are good. Not on the perch\bluegill\walleye level but good nonetheless. I'd eat them more often but not a great population around me. I know we are separated by half the country but I feel like we may be brothers. 1 Quote

I did a half dozen for the guys at work a few years back and they swore it was the best fish they'd ever eaten. 1 Quote

And soaking them in ice water with some kosher salt goes a long ways. Even then they are more mushy than flaky. Cutting them into fish stick size strips or thinner and frying them super crisp helps. 1 Quote

Eaten white bass all my life, grew up fishing first-light jumps on Lake LBJ with my dad, fly-rod limits up the rivers in spring spawning runs, gave a presentation to fly fishing clubs a few times (got paid). White bass are the perfect freshwater meat-fish, and need to be harvested, because they deplete the food base for other species. But the best fish I've ever eaten was catfish for breakfast on a February camp out. Explorer scouts (Boy Scouts, Emergency Services training, add girls to the group). My dad and best friend's dad were the scout masters. Camping at Crane's Mill Park at the top of Canyon Lake, first thing my dad and I did was run the boat to set out trot lines. Retrieved them the next morning. Filleted the catfish, cut them to small pieces. Corn mean and spices in a shake-bag. Deep-fried over the campfire in a Dutch oven - when a wood match floating on the oil lights, it's just right to cook. When the catfish is done, it floats. 5 Quote

Super User JustJames Posted January 21, 2023 Super User Posted January 21, 2023 Not bad this time, but only can stand out in the cold just hour or so. d**n SoCal dress code, short and boat shoe not gonna make it ????. Caught about 10 or so lost about half, all in the 12-13” only one 10” biggest one was 14”. The only problem for me is to cast within 2-3’ radius on to a spot in the 5-10mph wind, beyond that no bite. Next time I might take pontoon out and anchor on top of it. Take a few home for my lovely wife. 14 Quote

We had walleye and a few white bass fillets and she was thrilled and appreciative of the meal, but when asked, she said that she preferred the white bass to the walleye. Personally I prefer walleye to white bass, but like white bass well too. We invited my brother and his wife to dinner last year and because the DNR here encourages the eating of invasive Spotted bass from the lake we live on, we had Crappie and Spotted bass for dinner. I preferred the Crappie, but my wife, my brother and his wife all either preferred the Spotted bass or said that it was a wash and they couldn't tell the difference. Fishing was slower this year, but we still managed to catch a variety of quality fish. We landed three sailfish, and 3 dorado on the way down from PV. Once there we landed Blue Marlin, striped marlin, sailfish, and dorado. On the way back we landed numerous rooster fish, and Spanish Mackerel. We had some big seas, making taking pictures, and driving the boat difficult at times. As always I wish I had taken more pictures. I was trolling very close to the beach while fishing for rooster fish, so wasn't able to get any pictures. We had 5 dorado on at one time, and were able to land all 5. I was able to get some good pics of that action. The best part of the trip, was I hired a chef that my deck hand recommended, and not only could he cook, but he has been bass fishing in Mexico his whole life, and promised to take me fishing on his parents bass boat they have at Picachos. 13 Quote

Probably 16-17” and not beat my PB @2.52lb but I’ll take it all day, happier than 4lb bass I caught a few back for sure. My old PB released of course. 21 Quote
