For me I'd say Mahi....freshwater wise probably perch or bluegill because they are a little more firm. What say you?

 For traditional Baja California-style fish tacos I go with battered and fried fish, usually cod, haddock, or snapper.  All excellent fried. 

 For Grilled Fish Tacos I prefer a fish that holds up well over high heat and won't fall apart on the grill. So I lean towards fattier fish like tuna & salmon.

For a more steak like texture, swordfish and halibut work well.

Mako shark is a real sleeper right here too.  

A little harder to find sometimes.

COD.  but tacos are way down in the fish dishes for me.  

 

I have made salmon ones when I am feeling frisky, and they are great as well.

Mahi grilled, for sure. Similar would be king mackerel, and cobia, blackfin tuna also quite good.

Walleye, or just plain chicken if I can't catch any walleye.

Mahi or grouper. For fish that I can actually catch: channel cat or white bass. Blackened is the way to go.

The stocks are way down, so it's getting harder to find them, but the actual catching and boating is pretty straight forward, like a worm under a bobber (three actually), but much bigger. Very good on the grill, thresher is pretty good too.

Cunner (bergall) and Tautog (blackfish).

 

As far as mako shark goes; waaaay too good for a taco. That’s a star of the dish fish.

A waste of fish! Atlantic Haddock is my fish of choice but I wouldn't shred it in a taco. Maybe sardines.

I don’t think any freshwater fish tastes as good friend as crappie, although I’ve never used them for tacos. Bluegill, pumpkinseeds, perch are all good for tacos.

I’m with ya there, I’ve never got onto the fish taco train even though I’ve eaten them plenty (friends and family sometimes insist)

 

I like just eating fish and chips better

Yes. I don't go out of my way for tacos but if I do it's beef.

You don't shred it, you fry it up like a nugget, but I agree there are better uses for fish, I'm a carnitas and tomatillo sauce guy myself.

The Atlantic from Boston up to Canada is paved with haddock, we make a couple of trips every year.
